Sausage Cheese Balls without Bisquick. Serves 6 (about 36 balls total). Mix, roll, bake.

Ingredients
- 16 oz ground sausage, room temperature (90g protein)
- 2 cups sharp cheddar cheese, freshly shredded (56g protein)
- 4 oz cream cheese, softened (7g protein)
- 2 cups all-purpose flour
- 1 tbsp baking powder
- ½ tsp salt
- 2 tbsp butter-flavored shortening
- Melted butter and fresh parsley for garnish, optional
For dipping: jelly, Dijon mustard, or BBQ sauce
Method
- Heat oven to 350°F. Line a baking sheet with greased parchment or a silpat. Set aside.
- In a large bowl, combine flour, baking powder, and salt. Cut in the shortening until the mixture is crumbly.
- Add the ground sausage and use your hands to mix until all of the flour is worked into the sausage. No dry patches.
- Add the softened cream cheese and work it evenly through the mixture.
- Add the shredded cheddar and work it through evenly.
- Use a mini ice cream scoop or two spoons to portion into balls, roughly 1 to 1.5 inches each.
- Place on the prepared pan and bake 30 minutes until the bottoms are golden brown.
- Brush with melted butter and sprinkle with parsley if you want the extra touch.
- Serve with dipping sauce on the side.
Make-ahead and freeze: form the raw balls and freeze on a sheet pan before transferring to a bag. Bake from frozen at 350°F for about 40 minutes. They’re just as good.
